Cavalo Nero, also known as Tuscan kale, black kale, or dinosaur kale, is a dark leafy green vegetable that has become ever more popular in the UK. It’s name means ‘Black cabbage’ in Italian due to it being a member of the brassica family.
The leaves are the only edible part of this hearty vegetable, Cavalo Nero has long, narrow leaves that are a deep, rich green colour and a slightly bumpy texture. The flavour is bold and slightly bitter, with a sweet and earthy undertone. It is a nutrient-dense vegetable, packed with vitamins A, C, and K, as well as fibre, calcium, and iron.
